Roasted Shallot and Creme Fraiche Mashed Potatoes

These potatoes have the potential to unite the world, or at least the arguing relatives at the table - they are that good.

We mill our potatoes multiple times so they are light and fluffy, and fold in butter and creme fraiche, slow roasted chopped shallot, and fresh chive. Magic.
